Garlic Roasted Cherry Tomatoes & Herbs
/Roasted tomatoes are a very underrated side with so much potential. These work great as a side to a white fish or even better turn them into a delicious tomato soup!

Directions
1. Preheat your oven to 400F
2. In a rectangular 9x13 baking dish, place the cherry tomatoes, shallots, garlic, oregano, basil, sea salt.
3. Drizzle the olive oil all over it and toss to combine.
4. Bake for 35-40minutes until the tomatoes burst.
5. Remove from the oven and squeeze the garlic out of the head and stir into the tomatoes.
6. Serve with gluten free bread and olive oil or turn these into tomato soup.
