Grain Free Avocado Toast
/Skip the grains and make this avocado toast with cassava flatbread! Toast the cassava bread until crispy, then top with a smooth and creamy avocado mixture. Add some smoked salmon and microgreens for an easy grain free breakfast or brunch treat!

Ingredients
Cassava Flatbread
1 tablespoon olive oil (use code TRAILTOHEALTH for 10% off)
1 ripe avocado
½ lemon, squeezed
¼ teaspoon sea salt
¼ teaspoon garlic powder
1-2 pieces of Wild smoked salmon
Sesame seeds for garnish
Microgreens and fresh dill for garnish
Directions
1. Preheat your oven or toaster oven to 350 F (176 C) and line a baking sheet with parchment paper.
2. Lay 1-2 pieces of Cassava flatbread rough side down and top with a drizzle of olive oil (about 1 tablespoon) and a pinch of sea salt.
3. Bake for 8-12 minutes until it starts to get crispy.
4. In a small bowl, combine the avocado with lemon, salt and garlic and mix until desired smoothness.
5. When the bread is out of the oven, let it cool slightly for a few minutes and the top with a layer of avocado mixture.
6. Top toast with wild salmon and garnish with microgreens, dill and sesame seeds.
