Lemon Dill Compound Butter

A compound butter is a wonderful way of infusing flavor into a dish with little effort. This one includes fresh dill and lemon zest, which makes it excellent for melting over meaty white fish or fatty rib-eye. You could even toss it with hot cooked gluten-free pasta and seared scallops or shrimp for an easy, yet delicious, weeknight meal.

Ingredients

1 stick grass-fed unsalted butter
2 tablespoons chopped fresh dill
1 tablespoon lemon zest
1 teaspoon lemon juice
1 teaspoon garlic powder
½ teaspoon salt

Directions

1. Let the butter soften for about an hour before starting.

2. Once softened, stir the butter with the dill, lemon zest, lemon juice, garlic powder, and salt in a bowl until well combined.

3. Lay a piece of parchment paper on a flat surface and dollop the butter mixture on top. Using the paper, begin to roll the butter mixture into a log shape. If the butter is too soft to handle, you can place it in the refrigerator to harden a bit.

4. Once your log is formed, twist the ends of the parchment paper to enclose it

5. Place in the refrigerator until firm and use it for cooking or in any recipe

6. It is great melted over fish or steak
