Simple Basil Pesto

There is nothing better than fresh basil to remind you of summer and ramp up every dish on the dinner table. Use this basil pesto as a sauce for pasta, a rub for grilled meat or roasted vegetables, or even to dollop into soup or stews before serving. If you don’t have basil on hand, but still want to make this, parsley and cilantro are also excellent options.


Yields: 1 cup (approx.)
Prep Time: 10 minutes
Cook Time: 0 minutes


Ingredients

2 cups destemmed basil 
¼ cup pine nuts, walnuts or macadamia nuts 
¼ cup Parmesan cheese or nutritional yeast 
2 garlic cloves or 1 tablespoon of garlic powder 
¼ teaspoon sea salt 
½ cup olive oil (use code TRAILTOHEALTH for 10% off)

Directions

1. Add the basil and nuts to a food processor and pulse a few times to combine. 

2. Add the Parmesan, garlic, and sea salt, and pulse a few more times.

3. Remove the small lid from the food processor, and slowly add the olive oil while it is running until the mixture forms a sauce.
