Sopa De Fideo

This is an old recipe my mom used to make for me when I was young. It is totally soothing healthy comfort food that is great when you feel under the weather or want a nourishing but light dinner. It combines maifun rice noodles with rich bone broth, tomatoes, and garlic for something perfectly heartwarming and amazing for a cool day.

Ingredients


1 package maifun rice noodles 
2 tablespoons avocado oil (use code TRAILTOHEALTH for 10% off)
1 package grass-fed beef bone broth, for plant based, use veggie broth (use code TRAILTOHEALTH for $15 off) 
¼ cup strained tomatoes 
1 tablespoon garlic powder
Salt, to taste 


Directions

1. Open the rice noodles and separate them into smaller chunks. 

2. In a large skillet set over medium heat, heat the avocado oil. Add the noodles and cook, turning them over a few times, until they have crisped up. Be careful not to burn and overcook them. 

3. Meanwhile, add the beef bone broth, strained tomatoes and garlic powder to a medium-sized pot and bring it to a simmer.

4. Once the rice noodles have crisped up, add them to the bone broth and stir frequently until the noodles are cooked, but not too soft.

5. Season with salt to taste and serve immediately.
