Bacon Brussels Sprout Leaves

So many people adore whole roasted Brussels sprouts but for a new preparation, impress your family and friends by dividing the leaves and sauteing on top of the stove. The sprout leaves will come across as a wilted green with an incredible earthy taste and may win more people over to enjoying this humble vegetable.

Ingredients

1 lb Brussels sprouts
1 package sugar free bacon  (Order grass-fed meat from Butcher Box (discount varies) or US Wellness Meats (15% off first 2 orders) with code TRAILTOHEALTH)
1 tablespoon coconut oil
½ teaspoon garlic powder
½ teaspoon onion powder 
½ teaspoon salt 


Directions

1. Rinse the Brussels sprouts, trim the stems and start to pull the leaves apart. You can place the sprouts in one bowl, stack another bowl on top and shake to remove the leaves. Pull the remaining leaves off by hand.

2. Cook the bacon In a large skillet set over medium heat until slightly crispy. Pat with paper towel to remove grease and cut into bite-sized pieces.

3. Heat the coconut oil with the garlic powder and onion powder. Add the Brussels sprout leaves and saute until cooked through. Stir in the bacon, season with the salt and serve immediately.
