Instant Pot Beef Osso Buco
/Osso buco is exactly the type of dish that is perfect for the Instant Pot. The Instant Pot breaks down the sinew so that the meat is super tender and fall-off-the-bone. There is also an incredibly flavorful and tangy sauce with notes of rosemary and thyme to drizzle over roasted potatoes or even mashed potatoes or cauliflower for a dreamy finish.

Ingredients

Sea salt and ground black pepper, to taste
4 cups beef broth (use code TRAILTOHEALTH for $10 off)
1 cup red wine
4 tablespoons tomato paste
2 tablespoons chopped fresh rosemary
2 tablespoons chopped fresh thyme
1 teaspoon garlic powder
1 teaspoon onion powder
Directions
1. Press SAUTE on an Instant Pot (use code TRAILTOHEALTH for 10% off) and add the avocado oil.
2. Season the beef shank pieces with salt and pepper to taste. Once the oil is heated, lightly brown the meat on both sides. If the pieces don’t all fit, brown two at a time, removing and setting them aside while you brown the remaining ones.
3. Once browned, return all the meat to the Instant Pot.
4. Add the broth, wine, tomato paste, rosemary, thyme, garlic powder, and onion powder, and stir together.
5. Place the lid on the Instant Pot, turn the valve to the sealing position, and set to MANUAL for 50 minutes.
6. Once the time has elapsed, let the pressure naturally release for 15 minutes before removing the lid. Taste the sauce and season with salt and pepper if needed.
7. Serve with roasted potatoes or carrots or a side of sautéed greens.
