Cauliflower Rice Pilaf with Currants

This cauliflower rice pilaf is fragrantly spiced with sweet currants and crunchy almonds and pine nuts. The combination is so full-flavored and balanced which makes this pilaf great on its own for lunch. Don’t stop there, though, as it would also be excellent paired with roasted chicken or herbed lamb chops for dinner.


Servings: 4 to 6

Ingredients

1 tablespoon olive oil (use code TRAILTOHEALTH for 10% off)
1 lb cauliflower rice 
1 teaspoon garlic powder 
1 teaspoon onion powder 
½ teaspoon cardamom 
½ teaspoon cinnamon 
¼ teaspoon salt 
1 cup dried currants 
½ cup slivered almonds 
2 tablespoons pine nuts
2 tablespoon fresh mint 


Directions

1. Heat a large skillet over medium heat. Add the olive oil, cauliflower, garlic powder, onion powder, cardamom, cinnamon, and salt. Cook until the cauliflower starts to become translucent.

2. Stir in the dried currants, almonds, and pinenuts.

3. Serve in a bowl garnished with fresh chopped mint.
