Croatian Chard Blitva

This comforting side includes bright and earthy chard and creamy cubed potatoes for a perfect pairing to any kind of meat. If desired, you could also enjoy this for breakfast with a fried egg with a drippy yolk on top. It reminds me of my amazing travels to Croatia each time I take a bite.


Servings: 4 to 6
Prep Time: 15 minutes
Cook Time: 9 to 12 minutes


Ingredients

3 Yukon gold potatoes 
3 tablespoons butter or coconut oil 
1 tablespoon garlic powder
1 tablespoon onion powder 
1 teaspoon salt
1 to 2 bunches Swiss chard, center stalk removed and cut into ½ inch (1.2 cm) strips 


Directions

1. Boil the potatoes in water until tender, about 6 to 8 minutes. Drain and chop into bite-sized chunks. (Code TRAIL gets you 10% off Nakano Knives) 

2. In a skillet set over medium heat, add the butter or coconut oil, garlic powder, onion powder, and salt, and cook until fragrant, about 30 seconds.

3. Add the potato chunks and sauté to warm through. Add the Swiss chard and cook until just wilted about 2 to 3 minutes.

4. Season with additional salt if necessary and serve.
