FliP Crêpes

FliPcrêpes is a company that produces its own gluten-free crepe mixes that are easy to turn into thin, delicate pancakes to hold all your favorite fillings. While the company sells gluten-free products, they are also dairy and egg-free and are produced in a nut-free facility. Moreover, the company’s mixes do not contain GMO flours.

The company provides two different mixes, one sweet and the other savory, although both will work in this recipe. The sweet one has a delicious, vanilla taste that would make a particularly ideal base for sticky fruit jam, but the savory one has the robust flavor of buckwheat that is perfect for those who prefer something a little less sweet. Be sure to keep both varieties on hand to make several kinds of crepes all through the week.

Servings: 6 x 10-inch crepes
Prep Time: 5 minutes
Cook Time: 10 minutes


Ingredients

1 cup sweet or savory FliPcrêpes mix
1 tablespoon melted butter, coconut oil, or ghee
2 eggs
1 cup whole milk or dairy-free milk (Coconut milk or Almond Milk)
Fruit jam of choice
Lemon juice


Directions

1. Prepare the FliPcrêpes mix according to the package instructions. 

2. Heat some of the butter or coconut oil in a crepe pan.

3. Pour one-sixth of the batter into the crepe pan and spread evenly to coat in a thin layer. Cook, flipping once, until lightly browned on each side. Repeat steps 2 and 3 to make 5 additional crepes.

5. Top each crepe with fruit jam and lemon juice and fold into quarters.

6. Serve warm and enjoy.
