Instant Pot Broccoli Cheddar Soup

Broccoli and cheddar are a match made in heaven and come together perfectly in this dreamy and creamy soup with a bone broth base!

Ingredients

2 tablespoon butter or olive oil (use code TRAILTOHEALTH for 10% off)
½ cup shallots, finely chopped
1 tablespoon garlic, minced
3 cups broccoli cut into small pieces
3 cups chicken bone broth (use code TRAILTOHEALTH for 10% off)
1 teaspoon sea salt
1 tablespoon fresh thyme, de-stemmed and chopped, more for garnish
½ cup full fat milk or cream
2 ½ cups Cheddar Cheese, grated


Directions

1. Start the instant pot in SAUTE mode and melt butter or olive oil in it. Add diced (use code TAIL for 10% off), shallots and minced garlic and saute for 2 minutes. Press Cancel and continue to next step.

2. Add broccoli, broth, sea salt and thyme and stir together. Place the Instant Pot (use code TRAILTOHEALTH10 for $10 off), lid on with the vent in sealing position.

3. Set the instant pot on MANUAL or pressure cook mode at high pressure for 5 minutes.

4. When the Instant Pot is done, let the pressure release naturally for 5-10 minutes.

5. Once the pressure has released, open the lid and blend with an immersion blender. Start to add the milk or cream in, a little bit at at time while constantly blending until it is a thick and creamy consistency.

6. Set the Instant Pot to SAUTE . Slowly add the cheese into the soup while stirring constantly until combined.

7. Serve in 2 bowls and garnish with additional cheddar cheese and thyme.
