Instant Pot Creamy Potato Soup

This creamy potato soup is sure to warm you on a cold fall or winter day. The recipe uses a2 milk which a special kind of dairy that only uses the a2 protein. What does that even mean? Well studies have shown that a2 protein has the potential to be easier to digest and hence cause less issues if you have found yourself sensitive to dairy in the past. Not only is it silky and creamy, its better for your digestion and delicious at the same time and is the magic ingredient that gives this soup its creaminess.

Ingredients

2 tablespoon butter or olive oil (use code TRAILTOHEALTH for 10% off)
1 shallot, finely chopped
3 cloves of garlic, minced
4-5 Yukon Gold Potatoes , peeled and chopped
2.5  cups chicken bone broth (use code TRAILTOHEALTH for $10 off)
1 teaspoon sea salt
1 tablespoon fresh thyme, de-stemmed and chopped
1 tablespoon fresh oregano, de-stemmed and chopped
1  cup a2 full fat milk
2 cups baby spinach

For Garnish
Chives, chopped
Bacon, crumbled
Cheddar Cheese, grated, optional


Directions

1. Start the Instant Pot (use code TRAILTOHEALTH10 for $10 off), in SAUTE mode and melt butter or olive oil in it. Add diced (use code TRAIL for 10% off), shallots and minced garlic and saute for 2 minutes.

2. Add potatoes, broth, sea salt, oregano and thyme and stir together.

3. Press Cancel and place the Instant Pot lid on with the vent in sealing position.

4. Set the Instant Pot on MANUAL Pressure cook mode at high pressure for 8 minutes.

5. When the instant pot is done, let the pressure release naturally for 10-15 minutes.

6. Once the pressure has released, open the lid and transfer the potatoes to a bowl with a slotted spoon leaving the broth in the pot. It is ok if a few potatoes get left behind. 

7. Start to add the milk in, a little bit at at time while constantly blending with a whisk or immersion blender until it is a thick and creamy consistency.

8. Set the Instant Pot on SAUTE mode and add in the spinach, stirring as it cooks into the creamy broth for a few minutes.

9. Transfer the potatoes back into the pot and stir.

10. Serve in 2 bowls and garnish with cheddar cheese, chives and / or bacon.
