Maple Glazed Roasted Carrots

Roasted carrots are such an easy and flavorful side to any meat and fish. Pair these sweet maple glazed carrots with a pork chop or white fish and the sweetness of the carrots and glaze will satisfy any sweet tooth in a hearty and healthy way.

Ingredients

1lb Carrots, peeled (use code TRAILTOHEALTH for 50% off your 1st box of fresh produce)
3 tablespoons Ghee or Coconut Oil, melted
¼ cup Maple Syrup
1 teaspoon Sea Salt
1 teaspoon Cinnamon
¼ cup chopped Hazelnuts
3 tablespoons fresh Thyme, chopped


Directions

1. Preheat your oven to 425 F and line a baking sheet with parchment paper.

2. In a small bowl, whisk together ghee or coconut oil, maple syrup, sea salt, and cinnamon. 

3. Lay the carrots out on the parchment lined baking sheet  and using a pastry brush, brush the oil and maple syrup mixture on all sides of the carrots.

4. Place in the oven and roast for 15-20 minutes and flip and roast another 15-20 minutes until golden brown.

5. Remove from oven and place in a serving bowl. Top with chopped hazelnuts and fresh thyme.
