Marinated Olives

Anytime I am out to dinner and marinated olives are on the menu I always have to order them. They seem like such a fancy luxurious way to eat olives. This recipe is so simple and delicious and will elevate your olives each time you eat them that you will never be able to eat them out of the jar plain again.

Prep Time: 5 minutes
Cook Time: 10 minutes


Ingredients

1 jar of pitted olives (I used castelvetrano olives)
¼ cup olive oil (use code TRAILTOHEALTH for 10% off)
Peel and zest of one lemon
Peel and zest of one orange
1 tablespoon lemon juice
2 tablespoons fresh rosemary, rough chopped
2 tablespoons fresh thyme, rough chopped
2 garlic cloves, minced
1 teaspoon salt


Directions

1. Pour the olives through a strainer and set aside. Save the jar to store the olives in.

2. In a small saucepan over low heat, heat the oil and garlic and saute for a few minutes before adding all the remaining ingredients just until fragrant. Add the olives and coat them in the oil mixture.

3. Pour everything back into the olive jar and seal with the lid. Shake every 10-15 min and let them marinate at least 2 hours but they can be made a few days ahead of use.  They can be stored in the fridge until ready to use.

4. Garnish with fresh herbs and sea salt if desired.
