Roasted Brussels Sprouts with Chestnuts

These gorgeous Brussels sprouts have the additions of bacon and chestnuts, making this a tasty dish for even those who don’t enjoy green vegetables. Be sure to have this on your holiday menu as you can prepare most of it in advance of serving. Just complete the initial roasting step and reserve the pan-frying to just before you plan to eat.

Cook Time: 28 to 40 minutes


Ingredients


2 tablespoons coconut oil
1 tablespoon garlic powder
1 tablespoon onion powder
Salt, to taste
1 lb Brussels sprouts, trimmed and halved
1 cup chestnuts
1 package pasture-raised bacon (Order grass-fed meat from Butcher Box (discount varies) or US Wellness Meats (15% off first 2 orders) with code TRAILTOHEALTH)


Directions

1. Preheat oven to 425 F (218 C) and line a rimmed baking sheet with parchment paper.

2. Melt the coconut oil and whisk with the garlic powder, onion powder, and salt.

3. Toss the brussel sprouts in a bowl with the oil mixture to coat. Place on the baking sheet cut-side up and roast for 15 to 20 minutes or until golden on the bottom.

4. Flip with tongs and roast for another 5-10 minutes. Add the chestnuts.

5. Taste and season with additional salt if needed.

ONCE ROASTED

1. Once the Brussels sprouts are cooked, heat a skillet over medium heat; add the Brussels sprouts and chestnuts, and quickly pan-fry, stirring to combine.

2. Add the chopped bacon, and cook, stirring, until crispy, about 8 to 10 minutes.

3. Serve in a cast-iron skillet
