Roasted Cauliflower With Pine Nuts & Raisins

This roasted cauliflower features all the warm, sweet, and savory tastes of autumn. It’s the perfect vehicle to highlight the tastes of the season. With sweet raisins and crunchy toasted pine nuts, this recipe will ensure you never look at cauliflower the same way again. This dish is a hearty side to any star of your table be it meat or fish.

Ingredients

1 head of cauliflower chopped 
3 tablespoons coconut oil or extra virgin olive oil (use code TRAILTOHEALTH for 10% off)
1 teaspoon cardamom 
1 teaspoon cinnamon
1 teaspoon sea salt 
¼ cup pine nuts
¼ cup raisins
3 tablespoons fresh flat leaf parsley, chopped 


Directions

1. Preheat oven to 450F.

2. Combine oil with cardamom, cinnamon and salt and coat cauliflower.

3. Place on parchment lined baking sheet and roast for 20-25 min. When the cauliflower has been roasting for 20minutes toss the pine nuts on the baking sheet so they start to toast.

4. Remove the cauliflower from the oven and let it cool slightly.

5. Toss with raisins and top with fresh parsley.

6. Serve as a side with a roasted meat or baked fish.
