Roasted Italian Cauliflower
/Roasted cauliflower is a staple side dish in my home and It pairs wonderfully with a variety of herbs to give it a unique flavor to pair with any dish. This Roasted Italian Cauliflower is no exception to the game with the fresh oregano and parsley as well as capers and truffle oil giving it a delicious Italian flavor.

Ingredients
1 head of cauliflower chopped use code TRAILTOHEALTH for 50% off your first box
3 tablespoons avocado oil or coconut oil
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt
¼ cup capers
3 tablespoons fresh oregano, chopped
3 tablespoons fresh parsley, chopped
Drizzle with truffle oil
Parmesan Cheese - Optional
Directions
1. Preheat oven to 400F
2. Combine oil with garlic, onion and salt and coat cauliflower.
3. Place on parchment lined baking sheet and roast for 20-25 min.
4. Remove the cauliflower from the oven and let it cool slightly.
5. Transfer to a bowl and toss with fresh oregano, parsley, and capers.
6. Transfer to a large plate and drizzle with truffle oil and optional to add a little bit of parmesan cheese.
