Roasted Shaved Brussels Sprouts with Herbs

Shaved brussel sprouts gets roasted, and tossed with fresh herbs, almonds, and parmesan cheese making a perfect Paleo-friendly side dish to your weeknight dinner!

Ingredients

1 pound brussel sprouts (use code TRAILTOHEALTH for 50% off your 1st box of produce)
3 tablespoons coconut oil 
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt 
3 tablespoons rosemary 
3 tablespoons thyme 
½ cup almonds
3 tablespoons parmesan, (optional)

Directions

1. Preheat the oven to 425F (218 C).

2. Shave the brussels sprouts with a knife, food processor or purchase already shaved. Place in a large mixing bowl.

3. In a small mixing bowl, melt the coconut oil and stir in the garlic powder, onion powder, salt and rosemary and toss over Brussel sprouts. Stir to coat.

4. On a parchment lined baking sheet, spread out the oil covered Brussel sprouts.

5. Roast for 15-20 minutes tossing with a fork about 10minutes through. 

6. Remove from oven and place the Brussels in a bowl. Toss in the almonds, thyme and Parmesan if using.
