Shakshuka
/Shakshuka is an exceptional dish including eggs that are poached in a flavorful sauce. The sauce is usually tomato-based and very fragrant, and this version is no different. This one incorporates Mediterranean ingredients like herbs, olives, and sun-dried tomatoes for a sauce that will be tangy, briny, and bright.

Ingredients
1 tablespoon avocado oil (use code TRAILTOHEALTH for 10% off)
1 jar whole tomatoes
2 tablespoons tomato paste
1 tablespoon ground garlic powder
1 tablespoon ground onion powder
1 tablespoon fresh oregano
1 tablespoon fresh parsley
1 pinch saffron
½ cup black olives
½ cup sun-dried tomatoes
1 cup of spinach
4 to 6 pasture-raised eggs
Parsley and cilantro for garnish
Directions
1. Heat the avocado oil in a cast-iron skillet set over medium heat.
2. Add the tomatoes, tomato paste, garlic powder, onion powder, oregano, parsley, and saffron, and bring to a simmer.
3. Stir in the black olives and sun-dried tomatoes.
4. Add the spinach, stirring until wilted.
5. Reduce heat and create 4 to 6 small dips in the sauce to make a bed for the eggs and crack the eggs into the dips.
6. Bake eggs at 350 degrees for 5-8 minutes. Don’t overcook as they will continue to cook in the pan.
7. Garnish with chopped cilantro and parsley.
