Summer Fruit Arugula Salad With Pecorino

Nothing says summer like fresh summer fruit. This salad reaps all the delicious flavors of summer and keeps you coming back for more. It works well with any summer fruit. I love to use stone fruits like nectarines or peaches but I also love using fresh strawberries and pairing it for brunch with a quiche. Whatever fruit you add, you can’t go wrong with this salad.

Ingredients

4 cups fresh arugula 
1 can heart of palm, chopped 
Summer fruit of choice. I used 3 nectarines, chopped (you can also do 1lb of fresh sliced strawberries or peaches or plums) 
2 avocados, diced 
¼ thinly sliced pecorino (optional)

Oregano & Thyme Dressing :
½ cup fresh lemon 
½ cup Olive Oil (use code TRAILTOHEALTH for 10% off)
¼ cup fresh oregano, de-stemmed & chopped  
2 tablespoons fresh thyme, de-stemmed & chopped 
2 tablespoons fresh shallots,  finely chopped 
1 tablespoon garlic powder 
1 teaspoon salt


Directions

1. Place the arugula in a large bowl .

2. Add the chopped heart of palm, summer fruit, avocados and toss. (use code TRAIL for 10% off Nakano Knives).

3. To prepare the dressing, mix all ingredients in a bowl with a whisk or add ingredients to a jar and shake to combine. You can also add all the ingredients to a Vitamix and emulsify the dressing. 

4. Top with pecorino if using and oregano & thyme dressing.
