Whipped Ricotta with Peaches & Herbs

There is nothing more delicious then a light and airy whipped ricotta, unless its topped with peaches and herbs! This cloudy whip will send your tastebuds into a simple yet delicious blend of honey and herbs along with the peaches and cheese. Who said ricotta is just for lasagne?

Ingredients

1 - 16oz container of Ricotta Cheese (option to use Kite Hill for dairy free)
2 tablespoons fresh thyme, de-stemmed
2-3 tablespoons of Honey
1 teaspoon garlic powder
1 teaspoon Sea salt 
2 tablespoons butter or coconut oil
3 peaches, sliced
1-3 tablespoons of Honey
3 tablespoons pistachios, finely chopped
3 tablespoons Fresh Rosemary, chopped 
3 tablespoons Fresh Thyme, chopped

Directions

1. In a food processor or stand mixer, whip Ricotta cheese, honey, thyme, garlic powder and sea salt for about 1 min until fluffy.

2. Spread on a wide plate to create a base and sprinkle with a little bit of sea salt. 

3. In a large skillet, heat some butter or coconut oil over medium heat. Add the peaches, cut side down and cook for a few minutes just until browned and flip and repeat. Remove from heat and set aside.

4. Once slightly cooled, assemble the peach slices on the ricotta bed and drizzle with honey.

5. Top with finely chopped pistachios, Thyme and Rosemary and a drizzle of olive oil.
