Dairy Free Vanilla Ice Cream

Ice cream lovers can rejoice with this healthy version flavored with vanilla extract and vanilla bean. This easy recipe includes just five ingredients that you may already have a home meaning that you won’t require any specialty foods to make it. Once you have mastered this, you can even try mixing in some favorites like dark chocolate chips or toasted walnuts for the ultimate sweet treat.

Prep Time: 15 minutes, plus freezing time
Cook Time: 5 minutes


Ingredients

4 cups almond milk 
2-6 tablespoons maple syrup or honey depending on desired sweetness
1 vanilla bean
1 tablespoon vanilla extract
¼ teaspoon salt


Directions

1. In a saucepan set over medium heat, whisk the almond milk with the maple syrup or honey.

2. Stir frequently until the milk starts to simmer; remove from heat. Meanwhile, slice the vanilla bean in half and scrape out the seeds. Reserve the vanilla bean pod halves for another use. (Code TRAIL gets you 10% off  on Nakano Knives) 

3. Whisk the vanilla bean seeds, vanilla extract, and salt into the milk mixture. Allow to cool completely.

4. Pour into an ice cream maker and follow the manufacturer’s directions.

5. Pour into a loaf pan and freeze until solid.
