Instant Pot Shredded Chicken

The uses for shredded chicken are endless. Make a batch in your Instant Pot, store it in the fridge and have it through the week to add to salads or healthy bowls. Alternatively, toss the cooked chicken with a sauce and stuff into cassava tortillas or lettuce leaves for tacos.

Servings: 4 to 6
Prep Time: 10 minutes
Cook Time: 15 minutes


Ingredients

1.5 lb chicken breast or tenderloins (Order grass-fed meat from Butcher Box (discount varies) or US Wellness Meats (15% off first 2 orders) with code TRAILTOHEALTH)
1 tablespoon avocado oil  (use code TRAILTOHEALTH for 10% off)
1 tablespoon garlic powder 
1 tablespoon onion powder 
½ teaspoon salt 
½ cup water or chicken broth (use code TRAILTOHEALTH for $10 off)


Directions

1. Add the water or chicken broth and steaming rack to the bottom of the Instant Pot (Use code TRAILTOHEALTH for 10% off) .

2. Place the chicken in the Instant Pot on the steaming rack and add the oil, garlic powder, onion powder and salt.

3. Place the lid on top, lock and move the valve to the sealing position. Press the POULTRY setting and cook for the default time.

4. Once finished cooking, allow to depressurize naturally for 15 minutes. Remove the chicken from the pot and shred.
