Ingredients

2 cups Beths Blend Grain Free Flour (use code TRAILTOHEALTH for 10% off)
⅓ cup maple sugar 
1 teaspoon salt 
2 eggs
2/3 cup coconut milk 
¼ cup coconut oil 
1 teaspoon vanilla extract 
2 tablespoons Meyer lemon juice 
1 tablespoon Meyer lemon zest 
1 cup fresh blueberries


Directions

1. Preheat oven to 350 degrees. Prepare muffin tin with paper cups and then set aside.

2. In a stand mixer, combine the flour, maple sugar and sea salt.

3. In a medium bowl, combine the eggs, coconut milk, coconut oil, vanilla, Meyer lemon juice and zest and whisk together.

4. Pour the wet ingredients into the stand mixer with the flower and combine.

5. Gently fold in the blueberries

6. Spoon the batter evenly into each muffin cup and then place the muffin tin in the oven to bake for 15-17 minutes or until the tops are browned.
