Paleo Chocolate Mousse

This chocolate mousse is rich in flavor and naturally sweetened! This Paleo-friendly dessert is made with avocados, maple syrup, and organic Great Lakes Gelatin MCT Powder. This dessert comes together quickly by through the use of your food processor! With a little vanilla extract and sea salt to help balance out the chocolate and sweetness, you and your guests will swoon over this chocolate mousse. Your guests won’t even know it’s Paleo-friendly and made from avocados!

What makes this dessert special is the addition of Great Lakes Organic MCT Powder. The MCT powder is made from 100% Organic coconuts, it's easily metabolized by the liver to produce ketones. It is Keto and paleo-friendly. It helps supports your body’s metabolism and is natural fuel for your brain!

Ingredients

4 oz semi sweet chocolate
2 avocados, halved and pitted
2 tablespoons unsweetened cocoa powder
1 tablespoon Great Lakes Gelatin MCT Powder
¼ cup non dairy milk (I used NutPods)
1 tablespoon vanilla extract
¼ teaspoon sea salt
1-4 tablespoons maple syrup


Directions

1. In a double boiler, melt the chocolate, set aside and let it cool.

2. Scoop the avocado into a food processor with the S blade and add all of the ingredients except the melted chocolate. Blend until smooth.

3. Pause to scrape down the sides, continue to blend, until the consistency is very creamy and now add in the melted chocolate. Add additional sweetener if desired as well.

4. Divide the mouse evenly into 4 ramekins and garnish with berries and mint leaves.

5. Can be served immediately or chilled in the refrigerator before serving.
