Sun Dried Tomato Cauliflower Flatbreads with Pesto

This is not your ordinary toast, this is made with Cali’flour Foods flatbreads made from cauliflower with zesty sun-dried tomatoes.  These little flatbreads are absolutely delicious and are gluten and grain-free and keto-friendly. Serve them up as an easy weeknight dinner or an appetizer for your next get-together.

Prep Time: 10 minutes
Cook Time: 15 minutes


Ingredients

4 Sun-dried tomato Cali'flour Foods Flatbreads (Use code TRAILTOHEALTH for 10% off)
1 batch of Basil Pesto 
1 large tomato, thinly sliced 
2 tablespoons fresh basil, chopped
Sea salt to taste  


Directions

1. Preheat your oven to 400 F 

2. Place flatbreads on pizza screen or parchment lined baking sheet 

3. Bake for 10-15 minutes, until crispy.

4. While the flatbreads are crisping, make a batch of my Basil Pesto 

5. Remove flatbreads from oven and let them cool slightly.

6. Spread fresh pesto on the flatbreads and top with sliced tomatoes. 

7. Top with some fresh basil and sea salt and enjoy
