Grain-Free Banana Fritters

These fluffy treats have the robust taste of banana and crispy, golden edges. Using cassava flour rather than all-purpose makes these grain-free and suitable to serve to almost anyone. While you can enjoy these any day of the week, they would be particularly good at the end of a Thai-inspired meal with coconut ice cream.


Servings: 4 to 6
Prep Time: 10 minutes
Cook Time: 10 to 15 minutes


Ingredients

2 cups Otto’s Cassava Flour, sifted 
2 bananas, mashed
½ cup nut milk of choice 
3 teaspoons baking powder 
1 teaspoon salt 
2 eggs 
1 tablespoon butter or coconut oil, melted and cooled slightly 
2-3 cups of coconut oil, for frying
½ cup confectioners sugar (optional)


Directions

1. In a stand mixer, beat the sifted flour with the bananas, nut milk, baking powder, and salt.

2. Beat in the eggs and butter.

3. Heat the oil in a stovetop fryer. Once hot, cook the fritters in batches by placing a few spoonfuls of the batter into the oil and frying until golden brown.

4. Remove the fritters from the oil with a slotted spoon and let them drain on a plate lined with a paper towel. 

5. Dust with confectioners sugar before serving (optional).
