Pomegranate Blood Orange Dressing

This dressing is bright and tangy with the pine scent of fresh rosemary. It is the perfect way to pay homage to the season’s bounty including fresh pomegranates and blood oranges. Toss with any of your favorite greens and if you have some left over, it would be delicious drizzled over roasted vegetables or chicken.

Ingredients

½ cup Kasandrinos olive oil (use code TRAILTOHEALTH for 10% off)
¼ cup blood orange juice
¼ cup pomegranate juice
1 tablespoon chopped rosemary
1 teaspoon chopped thyme
½ teaspoon salt


Directions

1. Whisk the olive oil with the blood orange juice, pomegranate juice, rosemary, thyme, and salt until completely emulsified. You can also use a high speed blender to combine and emulsify the dressing.
