Daikon Fries

Daikon is an Asian radish that is oblong, white and starchy, and a perfect replacement for potatoes if you can’t have them. They crisp up like a dream using an air fryer and don’t require much fat. Consider using daikon as a low carb substitute to mashed potatoes as well by boiling, seasoning and mashing as you normally would.

Ingredients

1 daikon
1 teaspoon avocado oil  (use code TRAILTOHEALTH for 10% off)
¼ teaspoon garlic powder
Salt, to taste


Directions

1. Peel the daikon and cut into 2 1/2-inch by 1/4-inch (6 cm x 1/2 cm) fries.

2. Soak the fries in water for 10 to 15 minutes. Dry thoroughly between paper towels.

3. Preheat an air fryer for 5 minutes at 390 F (200 C).

4. Toss the daikon fries with the avocado oil and garlic powder. Season with salt to taste.

5. Place in the air fryer basket and shake.

6. Cook in the air fryer for 15 to 20 minutes or until well browned, shaking every 5 minutes to ensure even cooking. Serve immediately.
