My Rosemary Dressing is easy to make on a whim. It uses a few pantry staples along with fresh lemon juice and rosemary, which are excellent flavors with heartier lettuces like endive or radicchio. This dressing really goes with any greens you have on hand. Be sure to use fresh rosemary when you make this, it has a more robust taste than dried and is simply irreplaceable.

Cilantro Lime Dressing

This Cilantro Lime Dressing from my book, Wandering Palate, provides a burst of creamy, bright flavor on a steak salad.  It is based on a chimichurri sauce but is a bit richer and creamier with the addition of avocado.
