Brunch

Shakshuka

Shakshuka is an exceptional dish including eggs that are poached in a flavorful sauce. The sauce is usually tomato-based and very fragrant, and this version is no different. This one incorporates Mediterranean ingredients like herbs, olives, and sun-dried tomatoes for a sauce that will be tangy, briny, and bright.

Baked Eggs In Avocado

Avocado and Eggs are a match made in heaven. This healthy, simple and elegant breakfast will wow your brunch guests and keep you full for hours with all the healthy fats. These can even be made as an easy weekday breakfast. Follow my cookbook, Wandering Palate, by popping them in the oven while you are getting ready and come back 15-20 minutes later to a healthy and nourishing breakfast.

Shirred Eggs With Olives

If  you  are  an  avid  olive  lover  but  have  never  tried  them  with  eggs,  this  will  become  your  new  favorite  dish  for  breakfast.  Check out my cookbook, Wandering Palate, for the full recipe.

Spinach and Feta Quiche

This Spinach And Feta Quiche is a tender egg bake filled with spinach and salty feta cheese. The best way to get a tender quiche is to incorporate fat. In this case, cream helps the eggs bake into a custard-like texture, but you can substitute with half and half, and coconut milk with equal success. Serve this for your Easter bunch or lunch with a tossed green salad and fresh fruit!

Eggs Benedict

Eggs Benedict is a breakfast staple but this version is minus the English muffin by using crispy, golden potato latkes as a base instead. Get this recipe and more in my book, Wandering Palate!

Sheet Pan Breakfast Hash

Easter Breakfast can be a big affair!  Sometimes mornings are too hectic to have a nutrient dense breakfast. This sheet pan hash is going to change your life. You can have everything prepped and ready to cook, pop it in the oven while you get ready and by the time you are showered and dress or before guests begin arriving. You can use sweet potatoes or regular potatoes in this recipe and make as many eggs as you want.

Meyer Lemon & Blackberry Paleo Muffins

Most muffins are full of sugar and carbs which make them not ideal for starting your day, but these Meyer Lemon and Blackberry Muffins are grain free and absolutely delicious! They are so light and fluffy and bright and fruity from the sweet Meyer Lemon juice and fruit.

Cranberry Orange Paleo Muffins

Pair these Cranberry Orange Muffins with the recipe above for sweet baked treats to either begin or end your Easter meal.

Banana Nut Bread

My spiced Banana Nut Bread is a nice switch to your classic banana bread. It's the perfect way to save overripe bananas and this spiced banana nut bread will fit the bill perfectly. It is Grain-Free by using cassava flour and it gets a spicy twist from warming cinnamon and nutmeg.

Blueberry Lemon Loaf

Fresh blueberries and tart lemon combine in This Loaf Recipe making it a perfect Easter breakfast or brunch. The coconut glaze is unique because it uses maple syrup for sweetness rather than powdered sugar and the use of coconut butter gives the glaze its creaminess and coconut taste.

Paleo Blueberry Muffins

These Blueberry Muffins are gluten-free and grain free with an underlying almond taste, and are delicious for Easter breakfast or dessert. Although they do not use traditional flour, they have a wonderful, cake-like texture.

Pancakes 2 Ways

While most pancake recipes include all-purpose flour, my pancake recipes are great for gluten-free, grain-free, and nut-free diets! Be sure to try my Plantain Pancakes which add a wonderful starchiness and unique taste to an otherwise traditional pancake; or, my Almond Flour Pancakes! You can find this recipe and more in my book, Wandering Palate.

Mains

Herb Crusted Rack of Lamb

This Rack Of Lamb is so simple to make but will look so impressive when served to guests. The herb crust infuses flavor into the meat while adding an attractive spark of green.

Patagonia Lamb

I love this Patagonia Lamb recipe, and I'm sure you will too! The lean nature of lamb means it is best to serve it between medium-rare and medium doneness. Simply check the temperature at intervals to ensure this roast will be the most tender and tasty lamb you have ever enjoyed.

Grilled Picanha

Grilled Picanha is a Brazilian staple but is one of my favorite cuts of meat. Often referred to as a Top Sirloin Cap, it is known for its flavorful fat cap that infuses the meat while it cooks. Grill this bad boy up and slice it into thin juicy pieces and everyone will be coming back for more.

Rosemary Steak

This Rosemary Steak is surprisingly simple which means it's a great Easter option for you to prepare. The key to this steak is pounding it down thin and letting it marinate before searing it off in a cast-iron skillet. I was also very excited to use my new Nakano Chef Knife on this steak too. Every kitchen needs a good chef’s knife!

Tomahawk Steak

This Tomahawk Ribeye is seasoned simply and seared making for a quick and easy Easter dinner. Don’t let its size intimidate you, it is quite the easy steak to master.

Also, while a traditional oven brisket may take a few hours to make, a pressure cooker cooks it in a fraction of the time to equally flavorful results. You will definitely want to make this for your Easter Sunday!

Saffron Rice Baked Chicken

This Saffron Rice Baked Chicken Recipe takes classic chicken and rice to new depths. It includes an abundance of fresh herbs, tangy wine, and the fragrant aroma and color of saffron threads. Although it looks fancy, it is a one-pot meal because it gets both combined and baked in a cast-iron skillet. If you don’t have a cast-iron or other ovenproof skillet, however, just sear the chicken and combine the mixture in an ordinary skillet and transfer to a baking dish for the oven step.

One Pan Spatchcock Chicken

My Spatchcock Chicken Recipe is easier than it looks, I promise! Whole chickens often take a long time to cook, but the simple method of flattening a chicken can reduce the roasting time substantially as well as make portioning easier. By combining the chicken and veggies on a baking sheet, everything will be cooked at the same time and there will be less clean up as well. It's a win, win when prepping for your Easter buffet.

Roasted Chicken

This humble roast comprises of tender chicken, root vegetables and herbs that are extremely comforting for an Easter weekend at home. Just combine everything in a pan and bake in the oven until ready to serve. Get this recipe and more in my book, Wandering Palate.

Cauliflower Pasta Salad

This easy grain-free Pasta Salad is the perfect accompaniment to any summertime meal and can even become a main meal by adding your favorite protein. This creamy sauce could be used for any vegetables you would like to add richness too, such as kale, cauliflower or carrots.

Potatoes au Gratin

We all need comforting side dishes like Potatoes Au Gratin. Easter's a great excuse to squeeze this dish in. You want to peel and slice the potatoes then layer with a heavy cream mixture and lots of cheddar cheese!
