Pico is a classic salsa full of refreshing and vibrant flavor. It can be used as a topping on tacos or as a side to be enjoyed by the mouthful. Made with garden fresh tomatoes it’s the perfect summer appetizer! Serve with Just About Foods Cauliflower Tortilla Chips for a guilt-free snack.

Perfect Guac

Have you ever tried using a stand mixer to make perfectly creamy Guac? It's so easy and only takes 4 ingredients. 

It is really all about the ratio with Guacamole so depending on how much you have to make use this ratio and go up from there. Like Pico, this Guac can be enjoyed inside or outside your taco of choice!

Avocado Crema

You can’t go wrong with avocado anything. This Crema has a nice, smooth texture from the avocado and coconut, and their rich flavors are balanced with tangy lime. Pour it on everything for a creamy, citrusy accent. This recipe is from my cookbook, Wandering Palate.

Instant Pot Mexican Shredded Chicken

This delicious Shredded Chicken is the Mexican answer to your shredded meat cravings, filled with spices and the tanginess of lime. An integral part of this recipe is the Pili Hunters Buyo Fermented Hot Sauce, which is Filipino-inspired consisting of calamansi, chilies, garlic, and tamarind. This sauce really adds some complexity to an incredibly easy dish. Serve this inside my grain-free hard shell tacos or grain-free tortillas on their own or as the spicy part of your taco spread.

Instant Pot Shredded Beef Tacos

These tacos involve melt-in-your-mouth Beef, flavorful Pico, and creamy avocado. The beef cooks in the Instant Pot which means that most of the cooking is hands-off. Simply let the pressure cooker do all the work before shredding into bite-sized pieces and serving in lettuce or cassava taco shells. Find all the finer details in my cookbook, Wandering Palate.

Tequila Lime Shrimp Tacos

Tequila is a perfect cocktail base as well as a marinade ingredient! Plump, juicy Shrimp are covered in lots of tequila, lime, garlic, and cilantro for a mouthwatering marinade before skewering and grilling to perfection. Pop them in a taco shell for a mouth watering shrimp taco!

By using balls of aluminum foil, you can create your own tacos bowls at home with cassava tortillas. Simply drape the tortillas over the balls of foil and allow to toast in the oven until golden and crisp. Once done, they are filled with lettuce as well as all the best components of traditional tacos like tomatoes, beef, cilantro and cheese.
