Cinco de Mayo can be heavy and corn filled, but it doesn’t have to do be! I have you covered on what to make tonight or the rest of the week to celebrate from anywhere, and heck we might as well have Mexican food all week!

Stand Mixer Guac

Cinco de Mayo is not complete without some guacamole in your life. Have you ever tried using a stand mixer to make Perfectly Creamy Guac? It's so easy and only takes four ingredients. Guac is really all about the ratio so depending on how many avocados you have or how many people you will be serving, use this ratio and scale up from there. Of course, guac is personal so make sure to taste and adjust lime and salt ratios to your liking. 

Shrimp Ceviche

My Shrimp Ceviche is my favorite recipe and perfect for your Cinco De Mayo celebrations. Ceviche is a tasty dish that involves marinating seafood in acidic ingredients like citrus for a short time. This version is bright and refreshing with shrimp, lemon, and lime, and is great served on warm, summery days.

Spanish Tortilla

This Cucumber, Avocado, and Jicama Salad is a light and simple option to brighten up your Cinco De Mayo spread. Jicama is a slightly sweet and crisp Mexican root vegetable, making it pair perfectly with refreshing cucumber and creamy avocado. I like to serve it with a lemon-mint dressing for added freshness. This Corn Recipe is simple and it can be dressed up to preference. This corn recipe is so darn good it has turned into a siren call for any of our gatherings. Even the flakiest of friends can’t resist this dish once it’s been tasted. It’s a powerful dish, so use the power of it responsibly. First of all, this dish is simple, and there are a couple of ways to subtly dress it up for preference. There is one important thing you need to keep in mind; this dish only works with fresh corn, preferably organic. If you try to use frozen corn (I tried), it’s not going to even come close, not even close. Just don’t use frozen corn for this, got it? No frozen corn is to be used with this recipe. OK, going on.

This easy grain-free Pasta Salad is the perfect accompaniment to any summertime meal and can even become a main meal by adding your favorite protein. With briny and fresh Mediterranean flavors like salty olives, juicy tomatoes and fragrant basil, this dish will become a staple at every table. If planning to reserve in the fridge before eating, consider holding back some of the dressing to re-moisten the salad just before eating. While it’s not super Mexican, it is delicious and refreshing and goes great with the steaks or chimichurri chicken.

The recipe for this Avocado Crema sauce is simple and addicting! I love avocado anything. This crema has a nice, smooth texture from the avocado and coconut, and their rich flavors are balanced with tangy lime. Pour it on everything for a creamy, citrusy accent.

This Chimichurri Sauce is a new recipe I am loving. This classic Argentine sauce is full of healthy polyphenols from plenty of fresh herbs. Use this herby, garlicky blend as an accompaniment to any meat, such as grilled steak, pork or chicken.

Cilantro Herb Sauce

This smooth Cilantro Sauce is perfect for when you have a lot of cilantro in the garden to use. The cilantro (leaves and stems) combine into a tasty blend with garlic and olive oil for something that is excellent drizzled over your favorite proteins. You can even pour this over eggs or roasted veggies like rainbow carrots or beets for something unique. This cilantro sauce is so fresh and one of my new recipes.

This dressing provides a burst of creamy, bright flavor on a steak salad. It is based on a chimichurri sauce but is a bit richer and creamier with the addition of avocado. My book, Wandering Palate, includes this recipe and several other delicious dishes.

The refreshing salsa is the perfect sweet and savory accompaniment to any fish dish.
